a no-recipe recipe for a super quick weekday brunch spread

Yeah yeah, so everyone and their mother are spending days perfecting the perfect sourdough loaf. But listen, not everyone has the luxury of waiting for bread to rise. Some days, we’re just focused on getting ourselves out of bed. But that doesn’t mean we don’t deserve breakfast. And since your office is just steps away from your kitchen these days (or maybe, like me, you spend half the day working from the kitchen counter anyways), you deserve something that tastes luxurious. Something that feels like brunch, even though it can be whipped up in <15 min

What you’ll need (per serving)

  • 1 slice of delicious, crusty bread (doesn’t need to be homemade lol)
  • 0.5 avocado
  • 2 eggs
  • light salad greens (ie: arugula, baby spinach, baby kale)
  • handful of cherry tomatoes
  • yogurt of choice (I used coconut yogurt)
  • granola of choice (I always keep a jar of this on hand)
  • berries (or any seasonal fruit)

00:00 Start a pot of coffee

01:00 Stick the bread in the toasting vehicle of choice (ie: toaster oven, toaster, pan), if you’re feeling luxe, drizzle with some EVOO.

02:00 Wash and dry the tomatoes and put in a dry pan over medium high heat to roast, tossing occasionally letting it get some color.

04:00 Crack and mix eggs well, season with a little salt. Add a little butter or oil to a non-stick pan and add in the eggs, starting on low heat for a nice soft scramble.

09:00 Assemble the yogurt parfait with berries and granola.

11:00 Slice the avocado and top off with a squeeze of lemon or lime and some flaky salt.

13:00 Once the toast is toasted, arrange your plate with greens to fill the space (bonus: top with a simple mustard + EVOO vinaigrette, some cheese + cracked pepper)

14:30 Spoon the soft scramble on top of the toast and top with some fresh cracked pepper and flakey salt.

15:00 Eat!
