the one

an elevated eating experience rooted in local ingredients and tradition

The One is a special place. The kind of place that feels simple yet elegant. Luxurious but in a reserved and modest way that feels like a distinct contrast from the more conspicuously upscale shops along this part of Zhongshan Road. A beautiful composition of humble local ingredients, brought to another level with great respect for the culinary traditions of Taiwan.

The One is more than a restaurant or a shop, it’s a brand built around a lifestyle that invites each guest to get a taste of it. Drawing inspiration from seasonal changes and regional ingredients, each of their tasting menus is developed with respected local artisans served on custom pottery. The food combines French techniques with Taiwanese cuisine and a special focus on soup which stars as a main course. Each course looks modern and tastes nostalgic, a new interpretation on classics paired with Wu Pao Chun bread and local teas, wines and liquors. And when it comes to sweets they span from traditional Chinese sweet soups to beautifully decorated cakes.

In a city filled with trendy spots filled with trend seeking crowds, The One somehow remains a tranquil and timeless escape, for a unique and exquisite dining experience that transports you away from the bustle at street level without going far at all.
